If you’re looking for the ultimate summer drink, look no further than this refreshing creamy coconut lemonade.
Inspired by the classic Brazilian coconut lemonade, which is made of whole limes, condensed milk and water, this is my attempt to make a similar version that’s much healthier.
This coconut lemonade recipe uses whole coconut milk and honey to mimic the properties of condensed milk. And instead of using whole limes, I opted for lemon juice, to avoid any added bitterness from the pith of the limes.
Although, you’re more than welcome to lime juice instead of lemon juice. Whatever works best!
Coconut Lemonade Ingredients
Here’s everything you’ll need to make this refreshing creamy coconut lemonade.
- Coconut milk: I used the full-fat canned coconut milk, but you can also use lite coconut milk as well
- Lemons: Meyer lemons have the best flavor
- Honey: Try to use local honey if you can, or opt for maple syrup if you want to keep this fully vegan
- Kosher salt: Helps amp up the flavors in this lemonade
How to Make Coconut Lemonade
This lemonade is so easy to make. Everything is blended together and then strained. It takes max 15 minutes to whip up and will last up to a week!
- Pour the lemon juice into a high-speed blender, along with the water, coconut milk, honey and salt.
- Blend the lemonade on high for 30-60 seconds until frothy. Then strain through a fine mesh sieve or a nut milk bag to remove the tiny fat granules that will separate in the lemonade. This is totally normal btw.
- Once strained, pour the lemonade into a large pitcher and store in the fridge.
- When you’re ready to serve, rub your glass mouth with lime and roll in lime zest and coconut sugar. Add some ice to your glass and pour over the lemonade. Top with a mint leaf and enjoy!
Some Recipe Notes…
- Make sure to strain the lemonade with a sieve or nut milk bag. Once you’re done blending the lemonade together, you’ll notice a natural separation of the coconut milk fat, this is totally normal. Just strain it and you’ll have perfectly creamy coconut lemonade.
- Adjust for sweetness by adding extra honey or a drop of stevia. Additionally, you can make this lemonade sugar free by using liquid stevia drops or granulated monk fruit sugar.
- Don’t skip the salt. The salt is essential to bringing out the coconut flavor and boosting the sweetness in this lemonade recipe. You just need a little pinch!
- If you want even more coconut flavor, use coconut water instead of regular water. It takes this lemonade to the next level.

- ½ cup Lemon juice
- ⅓ cup Honey or Maple syrup
- ⅛ tsp Kosher salt

Pro tip, replace the water with coconut water for extra coconut flavor.
