Description
Inspired by the classic Brazilian coconut lemonade, which is made of whole limes, condensed milk and water, this is my attempt to make a similar version that’s a little healthier.

- 2 cups water
- 1 cup canned full-fat coconut milk
- 1/2 cup lemon juice
- 1/3 cup honey or maple syrup
- 1/8 tsp kosher salt
Instructions
- Blend the lemonade. Pour the water into a high-speed blender, along with the coconut milk, lemon juice, honey, and salt. Blend the lemonade on high for 30-60 seconds until frothy.
- Strain and store. Then strain through a fine mesh sieve or a nut milk bag to remove the tiny fat granules that will separate in the lemonade. This is totally normal btw. Once strained, pour the lemonade into a large pitcher and store in the fridge.
- Serve. When you’re ready to serve, rub your glass mouth with lime and roll in lime zest and coconut sugar. Add some ice to your glass and pour over the lemonade. Top with a mint leaf and enjoy!
Notes
Pro tip, replace the water with coconut water for extra coconut flavor.
