Coconut Matcha Energy Bites Ingredients
- Coconut: I recommend using shredded unsweetened coconut for best results. Not only will the bites have a better texture if you use coconut shreds, they will also stick together better. Additionally, make sure you use an unsweetened coconut to avoid any added cane sugar!
- Matcha: For a recipe like this, I would use a culinary grade matcha – that way you aren’t wasting expensive matcha in a recipe that it’s not the main focus. - Almond Flour: For best results, use blanched almond flour. Most regular almond flour tends to have the skins in it which will make the energy bites a tad bitter.
- Coconut Yogurt: You’re more than welcome to use any type of vegan yogurt (or regular yogurt if you’re not plant-based). However, the coconut yogurt just adds in extra coconut flavor.
- Honey: I love the flavor of honey in raw desserts/snacks as it really adds a nice layer of flavor to these matcha energy bites.
- Vanilla and Salt: For extra flavor and to help amplify the matcha and coconut.
- Chocolate: You can use any type of chocolate you like, but dark chocolate does go best with these energy bites. One important thing to remember with chocolate is to use one without any added cane sugar (preferably sweetened with coconut sugar or stevia) and no added fillers or emulsifiers.
Can I Substitute?
Unfortunately with a recipe as simple as this one, there isn’t much that you can substitute. Each ingredient is so essential to adding in flavor to these bites that replacing it with another ingredient would alter the taste! So I would stick with what the recipe calls for.
Why These Coconut Matcha Energy Bites are Healthy
- Matcha: Let’s just say that matcha has tons of antioxidants that will make your skin glow from the inside out! But to dive deeper, antioxidants are what free radicals, compounds that damage cells, cause cancer and other chronic diseases. Plus, when you use the entire leaf of tea, aka ground matcha powder, you’ll get all the nutrients. Rather than a fraction that you would get from steeping the tea leaves.
- Coconut: is especially high in manganese which is essential for bone health and metabolizing carbs – making it the perfect ingredient to pair with oatmeal! Additionally, the fat in coconut is in the form of MCT’s (medium-chain triglycerides) which are metabolized differently than other fats. Meaning that it’s used much quicker for energy than other fats. Lastly, coconut is rich in copper and iron which help form red blood cells, as well as selenium which protects your cells.
- Honey: is widely known to be amazing for it’s healing properties and vitamins. However, the one aspect of honey I like to highlight is the host of phytonutrients this natural “syrup” contains. Phytonutrients are powerhouses in plants that protect it from harm and help heal any wounds. These phytonutrients are responsible for the antioxidants and antibacterial properties that honey has. Which is why when we ingest honey it has been shown to have immune boosting and anti-cancerous properties.

- I want to stress that these benefits are only shown in raw honey. These benefits are completely destroyed in honey when it’s heavily processed. Make sure to buy your honey locally and from a source you trust!

Description
Introducing coconut matcha energy bites. These bites are full of tropical sweet coconut and green tea flavor. And covered in a generous amount of dark chocolate.
Ingredients
- ¼ cup Coconut yogurt ((sub with any vegan yogurt))
- 1 tbsp Honey
- 2 tsp Matcha
- ½ tsp Salt
- ½ tsp Vanilla extract
- ⅔ cup Coconut shreds
- ⅓ cup Almond flour
- ½ cup Chocolate chips
Instructions
- In a bowl, add in the coconut yogurt, matcha, salt and vanilla. Mix well. Then sprinkle in the coconut shreds and almond flour and mix again. The mixture should be slightly crumbly and sticky.
- Using about 1 heaping tablespoon of the mixture, roll it into a ball and set aside on a plate. Repeat until the energy bite mixture is used up.
- In a heat proof bowl, melt the chocolate chips. You can do so in the microwave or in a double boiler. Or, you can carefully heat up the chocolate in the oven. But you do need to be careful that the chocolate doesn't burn!
- Once melted, dip each ball into the melted chocolate, coating thoroughly and set back on a plate. Repeat with all the balls. Then place them in the fridge, uncovered, to chill for 5 minutes. That's it, there are ready!
- Store the coconut matcha energy bites in the fridge for up to 1 week.
