Coconut Stuffed Date Ingredients
Here’s everything you’ll need to make these coconut stuffed dates:
- Dates – duh, although if you can, try to use medjool dates as that variety tastes best
- Shredded Coconut – not the big flakes, but the super small coconut shreds, also make sure they’re unsweetened
- Dark Chocolate – I recommend using Hu Gems for this as they’re refined sugar-free, another great (and more affordable option) is Evolved chocolate chips
- Honey – you could technically leave this out as the dates and chocolate are already sweet
- Cashew milk – linking my recipe here
- Vanilla extract
- Salt
How to Make These Coconut Stuffed Dates
Honestly these dates are super simple to make.
Simply pit the dates. Stuff the dates with the coconut mixture and finish with a drizzle of dark chocolate and flaky salt. Easy peasy!
But to go in depth, here’s the nitty gritty details on how to make these insane coconut stuffed dates!
- Take out a large plate or cutting board and place a large piece of parchment paper on top, this will prevent the dates and chocolate from sticking to the plate when it’s frozen. Set aside.
- First, pit the medjool dates. Simply break the date apart and remove the seed. Make sure to leave the dates intact so you can stuff them easily with the coconut filing.
- In a mixing bowl, add the coconut shreds, honey, cashew milk, vanilla extract and salt. Mix until the mixture becomes almost paste-like.
- Take one pitted date, spoon in 1 tbsp worth of the coconut mixture inside the date, gently patting down with your finger to press the mixture down. Place the stuffed date on the plate you prepared earlier and repeat this process with the remaining dates or until the coconut mixture is used up.
- Add the chocolate chips in a heat proof bowl or ramekin and melt the chocolate either in the microwave or over a double boiler. Drizzle the chocolate over top of the dates or you can even dip the dates into the chocolate so they’re “extra” coated.
- Lastly, sprinkled the dates with some flaky salt to finish.
- Place the dates in the freezer for 10 minutes or until the chocolate is frozen, then enjoy!
- Store them in the fridge, where they should keep for up to 1 week.
