Crispy, chewy and subtly sweet refined-sugar free cookies. These almond and date cookies are the perfect way to celebrate Valentine’s. Or make them whenever you like, they’re just that good!
Unlike most healthy cookies, these cookies are both healthy and packed full of flavor. The dates, give these a super caramel-like flavor. While the almond flour and extract coupled with the cardamom give the cookies an exotic flair.
Also, these cookies take 20 minutes to make…so you have ZERO excuses not to make them!!!
What you’ll need:
Oats — you can use rolled oats, quick oats or even oat flour, as this recipe will eventually blend up all the oats into a fine powder. So use what you got on hand.
Almond flour — this gives the cookies a shortbread like texture, while also boosting the healthy fats and protein in these cookies. However, you can omit this and use all oat flour if you wish.
Spices — I cannot stress the importance of using the full amount of cardamom and cinnamon in these cookies. They just take these cookies to a whole other level…in the best way possible.
Medjool Dates — this is the only sweetener used in the cookies, so make sure to use a sweet variety like Medjool dates. A tip if your dates are on the drier side is to soak them in boiling water for 5 minutes to soften them up. However, I highly recommend using good quality Medjool dates, as the flavor will show up in the final cookie. I love using Coachella’s Best Dates, they’re super juice, ripe and have an incredible caramel flavor!
Grapeseed Oil — this is the only liquid, besides almond milk. that is used in the cookies, so it is important that if you substitute this oil, to use a liquid oil. Avocado oil works well as a substitute, but coconut oil or nut butter will not work.
Almond milk — this help give the Cookes some moistness (sorry) and crispiness to the outside of the cookie. Feel free to replace it with whatever plant milk you prefer.
Fresh Raspberries — this is what makes these cookies the perfect Valentine treat. You can also use frozen raspberries as well instead of fresh. Another option is to use about 1 tsp of raspberry jam instead of the fresh or frozen berries. Simply add in the jam to the center of the cookies once they are done baking.

Description

Ingredients
- 1 cup Rolled oats, ground into a fine flour
- ½ cup Almond flour
- ½ tsp Salt
- ¼ tsp Baking powder
- ½ tsp Cardamom
- ¼ tsp Cinnamon
- 7 pitted Coachella's Best Medjool Dates
- 3 Tbsp Grape seed oil
- 1 Tbsp Almond milk
- ¼ tsp Almond extract
- 1 cup Fresh or frozen raspberries
Instructions
- Preheat the oven to 350 F and line a cookie sheet with parchment paper.
- Begin by soaking the pitted medjool dates in boiling water for 5 minutes. While the dates soak, combine the oat flour, almond flour, salt, cardamom, cinnamon and baking powder. Make sure there are no lumps and everything is combined.
- Drain the water from the dates and add in the grape seed oil and almond extract. Mash the dates together with the oil to make a paste. Mix in the almond milk and stir to combine.
- Add the wet into the dry ingredients and mix with a spatula or with your hands until it creates a sticky dough.
- Roll the dough into 1 Tbsp balls and gently flatten with your hand, and indent the middle with your thumb. Place a raspberry or raspberry jam in the middle and bake the cookies in the oven for 12-14 minutes.
- Let the cookies cool for 5 minutes before enjoying!
