Description

These 62 calorie cinnamon sugar donuts are the best baked donuts you will ever have. Fluffy, melt-in-your mouth and super easy to whip up, these will become your new obsession.


Ingredients

Donuts:

  • ¼ cup (25g) Rolled oats, ground into a fine flour
  • ½ cup (58g) Spelt flour
  • 1 tsp Baking powder
  • ¼ tsp Baking soda
  • ¼ tsp Kosher Salt
  • ⅛ tsp Nutmeg
  • ⅛ tsp Cinnamon
  • Dash of stevia powder ((sub with 4-5 liquid stevia drops) )
  • ¾ cup (180ml) Almond milk
  • 1 tbsp (15g) unsweetened Applesauce
  • 1 tsp Apple cider vinegar

Cinnamon Sugar Mixture:

  • 2 tbsp (24g) Coconut sugar
  • 1 tbsp (12g) Monk fruit sugar
  • 3 tsp Cinnamon

Instructions

  1. Preheat your oven to 350° F and grease a donut pan. If you don’t grease the pan, the cinnamon sugar won’t stick. So lightly spray it with cooking spray. 
  2. Mix together the spelt flour, oat flour, baking powder, baking soda, salt, nutmeg, cinnamon and stevia powder. 
  3. Pour the almond milk, applesauce and apple cider vinegar into the dry ingredients. Mix thoroughly. 
  4. Add about 3 tbsp worth of the batter into each donut cavity and bake for 13-15 minutes until puffy and just brown. 
  5. While the donuts bake, mix together the coconut sugar, monk fruit sugar and cinnamon in a shallow bowl. 
  6. Once the donuts are done baking, let cool for 5 minutes in the pan, then remove and coat in the cinnamon sugar mixture. 
  7. Enjoy! Store the donuts at room temp in an airtight glass container.
