Donuts:
- ¼ cup (25g) Rolled oats, ground into a fine flour
- ½ cup (58g) Spelt flour
- 1 tsp Baking powder
- ¼ tsp Baking soda
- ¼ tsp Kosher Salt
- ⅛ tsp Nutmeg
- ⅛ tsp Cinnamon
- Dash of stevia powder ((sub with 4-5 liquid stevia drops) )
- ¾ cup (180ml) Almond milk
- 1 tbsp (15g) unsweetened Applesauce
- 1 tsp Apple cider vinegar
Cinnamon Sugar Mixture:
- 2 tbsp (24g) Coconut sugar
- 1 tbsp (12g) Monk fruit sugar
- 3 tsp Cinnamon
Instructions
- Preheat your oven to 350° F and grease a donut pan. If you don’t grease the pan, the cinnamon sugar won’t stick. So lightly spray it with cooking spray.
- Mix together the spelt flour, oat flour, baking powder, baking soda, salt, nutmeg, cinnamon and stevia powder.
- Pour the almond milk, applesauce and apple cider vinegar into the dry ingredients. Mix thoroughly.
- Add about 3 tbsp worth of the batter into each donut cavity and bake for 13-15 minutes until puffy and just brown.
- While the donuts bake, mix together the coconut sugar, monk fruit sugar and cinnamon in a shallow bowl.
- Once the donuts are done baking, let cool for 5 minutes in the pan, then remove and coat in the cinnamon sugar mixture.
- Enjoy! Store the donuts at room temp in an airtight glass container.
