How To Make Cinnamon Sugar Donuts
- Donut Batter: Begin by combining the dry ingredients together and then pour in the wet ingredients. Whisk to combine. It’s that easy.
- Fill the Donut Cavities: You can optionally transfer the batter to a ziplock bag with a hole cut in it, or a piping bag to fill the donut pan, however, I think a spoon works the best. Simply spoon about 3 tbsp worth of the batter into the donut cavities. Filling just up to the top.
- Bake: This takes only 12 minutes, so fast! Be sure to let the donuts cool on a wire rack. Allowing them to cool out of the pan will ensure that they don’t become soggy from the steam they create after baking!
- Make the glaze: I recommend making the glaze while the donuts are baking to save time. Simply blend the cream cheese, frozen blueberries, almond milk and salt until it forms a smooth pourable consistency. Pour through a fine mesh sieve to remove the blueberry skins.
- Glaze the Donuts: Dip each donut in, twisting the donuts as you take them out to get off excess glaze. Let them dry on a wire rack. Optionally, you can finish the donuts off with a sprinkle of flaky sea salt and hemp seeds…trust me this topping combo tastes divine!

Tips for the Best Donuts
- When testing this recipe the most important factor is making sure to grease your donut pan. Even if you have a nonstick donut pan, a quick spritz of cooking spray will help the cinnamon sugar mixture stick. Otherwise it’ll just fall off. I chose the cooking spray method as it is the best way to keep the calories low – instead of brushing them with vegan butter – while still making sure the coating will stick.
- In the cinnamon sugar mixture, I mixed both coconut sugar and monk fruit to keep the calories down, but still give the mixture that caramel-like flavor from the coconut sugar. Feel free to use all monk fruit or all coconut sugar!
How to Make These Donuts GF
To make the donuts gluten-free substitute the rolled oats with gluten-free oats. Bob’s Red Mill sells GF Rolled oats for a great price if you are looking for a source. If you have a severe gluten allergy, I would suggest using a 1/3 cup of a gluten-free flour blend instead. Substitute the spelt flour with a gluten-free flour blend as well.

Ingredients
Donuts:
- ¼ cup (25g) Rolled oats, ground into a fine flour
- ½ cup (58g) Spelt flour
- 1 tsp Baking powder
- ¼ tsp Baking soda
- ¼ tsp Kosher Salt
- ⅛ tsp Nutmeg
- ⅛ tsp Cinnamon
- Dash of stevia powder ((sub with 4-5 liquid stevia drops) )
- ¾ cup (180ml) Almond milk
- 1 tbsp (15g) unsweetened Applesauce
- 1 tsp Apple cider vinegar
Cinnamon Sugar Mixture:
- 2 tbsp (24g) Coconut sugar
- 1 tbsp (12g) Monk fruit sugar
- 3 tsp Cinnamon
Instructions
- Preheat your oven to 350° F and grease a donut pan. If you don’t grease the pan, the cinnamon sugar won’t stick. So lightly spray it with cooking spray.
- Mix together the spelt flour, oat flour, baking powder, baking soda, salt, nutmeg, cinnamon and stevia powder.
- Pour the almond milk, applesauce and apple cider vinegar into the dry ingredients. Mix thoroughly.
- Add about 3 tbsp worth of the batter into each donut cavity and bake for 13-15 minutes until puffy and just brown.
- While the donuts bake, mix together the coconut sugar, monk fruit sugar and cinnamon in a shallow bowl.
- Once the donuts are done baking, let cool for 5 minutes in the pan, then remove and coat in the cinnamon sugar mixture.
- Enjoy! Store the donuts at room temp in an airtight glass container.
