Description

This summer tomato salad is a combo of sweet cherry tomatoes, red onion and lemon juice. Resulting in the most delicious simple salad that has tons of flavor and pairs well with almost any dish.

Ingredients

Scale
  • 3 cups Cherry tomatoes
  • 1 medium Red onion
  • ¼ cup finely minced Parsley ((loosely packed))
  • ¼ cup Lemon juice
  • 3 tbsp Olive oil
  • 1 ½ tsp Flaky salt ((see notes))
  • 1 tsp freshly cracked Black pepper, to taste

Instructions

  1. Start by slicing the cherry tomatoes in half, lengthwise. Next, thinly slice the red onion lengthwise, the thinner the slices, the better. Add the tomatoes and onions into a large bowl.
  2. Add the chopped parsley into the bowl, along with the lemon juice, olive oil, kosher salt and black pepper. Toss to combine and add more salt or pepper if needed.
  3. Let the salad sit on the counter for 30 minutes before serving.

Notes

Flaky salt tastes best in this salad, but you can also use kosher salt (use 1/2 tsp instead).
