This summer tomato salad may be one of my most simple recipes to date.
But just because something is simple doesn’t mean that it’s boring.
One big misconception with cooking is that the more ingredients you add, the more flavor and texture the dish will have. In reality, a simple dish with minimal ingredients can taste just as good, if not better, so long as you’re using different techniques to amplify the flavor of each ingredient.
Moral of the story; simple doesn’t mean boring.
Case in point, this cherry tomato salad recipe that uses just a few kitchen staples, but somehow tastes phenomenal.
Summer Tomato Salad Ingredients
Here’s everything you’ll need to make this healthy tomato salad. And chances are you already have everything in your kitchen!
- Cherry tomatoes: Please get in-season local cherry tomatoes. Because whatever the tomatoes like on their own is how the salad will taste. So make sure to use the sweetest cherry tomatoes you can find. One other note, grape tomatoes are often mistaken for cherry tomatoes, but they’re more oblong in shape and have less of a sweet “fruity” flavor.
- Red onion: Or is it purple onion?
- Parsley
- Lemons
- Olive oil
- Kosher salt
- Black pepper: Don’t use pre-ground black pepper; it doesn’t taste the same as freshly cracked black pepper. And in a simple salad like this, little details make all the difference.
A Few Tips…
- Let the salad sit for at least 30 minutes. This is crucial to ensuring that osmosis can take place and amplify the flavors of the tomatoes and onion. Plus, 30 minutes is enough time to slightly pickle the onions, lending the salad another layer of flavor. However, I wouldn’t let this salad sit longer than 2 hours.
- Use the sweetest cherry tomatoes. Whatever your tomatoes taste like, the salad will have the same flavor. And as mentioned above, don’t get fooled at the store and buy grape tomatoes, they taste so different.
- Add in feta cheese for a greek spin on this tomato salad.
- Sorry, this salad has to be made fresh. This simple tomato and onion salad is one of those dishes that has to be made fresh. It tastes best the same day, otherwise the tomatoes start to get soggy and mealy.

Description
This summer tomato salad is a combo of sweet cherry tomatoes, red onion and lemon juice. Resulting in the most delicious simple salad that has tons of flavor and pairs well with almost any dish.
Ingredients
- 3 cups Cherry tomatoes
- 1 medium Red onion
- ¼ cup finely minced Parsley ((loosely packed))
- ¼ cup Lemon juice
- 3 tbsp Olive oil
- 1 ½ tsp Flaky salt ((see notes))
- 1 tsp freshly cracked Black pepper, to taste
Instructions
- Start by slicing the cherry tomatoes in half, lengthwise. Next, thinly slice the red onion lengthwise, the thinner the slices, the better. Add the tomatoes and onions into a large bowl.
- Add the chopped parsley into the bowl, along with the lemon juice, olive oil, kosher salt and black pepper. Toss to combine and add more salt or pepper if needed.
- Let the salad sit on the counter for 30 minutes before serving.
Notes
Flaky salt tastes best in this salad, but you can also use kosher salt (use 1/2 tsp instead).
