This lemon poppyseed oatmeal is packed with both lemon juice and zest; along with lemon flavor and vanilla bean paste. It’s safe to say these oats are far from boring! Plus, this oatmeal bowl gets topped with sunflower butter and honey, which complement the lemon so well.

Lemon Poppyseed Oatmeal Ingredients
Here’s everything you’ll need to make this lemon poppyseed oatmeal recipe, along with ingredient recommendations.
- Rolled oats: Duh!
- Poppy seeds
- Lemons: Since we’re using both juice and zest, try using organic lemons if possible!
- Lemon extract: This is optional! There’s already lots of lemon flavor from the lemon juice and zest. I like adding it for an extra punch of lemony flavor!
- Vanilla bean paste: Vanilla bean compliments lemon so well and tastes amazing in this oatmeal recipe, so don’t skip it!
- Almond milk: Highly recommend making my homemade almond milk for best results.
- Kosher salt
A Few Notes
So a few things before you make this lemon oatmeal recipe.
- Depending on the consistency you like with your oats, you can add an extra 1/2 cup of almond milk or water. I like to use just 2 cups of liquid, but if you like your oats more on the soupy side, add an extra 1/4 to 1/2 cup of milk or water.
- Speaking of liquid, make sure to use homemade almond milk or cashew milk, otherwise I can’t guarantee these oats will turn out. Ok, lol, I’m kidding. But seriously, homemade almond milk takes these oats to creamy dreamy heaven. So if you have the time, make your own almond milk, and thank me later.
- Lastly, if you’re worried about your milk curdling with the lemon juice, just leave it out. There is already tons of flavor from the lemon zest, lemon flavor, and vanilla bean paste.

Description

Ingredients
- 1/2 cup rolled oats
- 2 tsp poppy seeds
- 1 small lemon, both juice and zest
- 1/4 tsp lemon extract
- 1/4 tsp vanilla bean paste
- 1/8 tsp celtic sea salt
- 1 cup almond milk
- Sunflower butter and honey for topping
Instructions
- Add all of the ingredients into a small pot, place on medium-high heat, and bring to a boil. Once boiling, stir the oats and turn down the heat down to medium-low. Let the oatmeal cook away for 5-6 minutes. The longer you let the oatmeal cook, the creamier and softer it’ll be.
- During this time, you can prepare whatever toppings you’d like to use. Make sure that as you’re preparing your toppings, you’re also occasionally stirring the oatmeal, otherwise the oats will stick to the bottom of the pan!
- Once the oatmeal is done, cover the pot with a lid and let the oatmeal sit for anywhere between 5-10 minutes. This is my secret for getting super creamy oatmeal with the perfect texture. Then pop the oatmeal into a bowl, and top it with sunflower butter, honey, and a splash of cold almond milk. And if you’re feeling indulgent, you can add a square of vegan white chocolate on top!
Notes
If you’re looking to make this into a higher protein breakfast, highly recommend using Bob’s Red Mill high-protein rolled oats. Not an ad, just love them a lot!

Am making this again- lemon poppyseed and tips on making extra creamy – had to make again. Adding banana, interested to see how that goes, and halved the milk just for economy – its a winning flavour texture bomb
