By using whole-food ingredients, these cookie dough bites are packed with complex carbs, fiber, plant-protein and healthy fats. Making these the perfect grab-n-go snack with over 7g protein per bite.
Ingredients You’ll Need
These no-bake cookie dough bites need just eight pantry staple ingredients. Keep in mind that the full recipe is in the recipe card below. But I wanted to list out what you’ll need, along with substitution options, here.
- Oats – you can either grind your own oat flour or buy it premade from the store. However, making your own oat flour is so much cheaper and it’s super easy.
- Almond flour – make sure to use blanched almond flour.
- Chocolate chips – I love using the Hu Chocolate date sweetened chocolate chips or Hu gems.
- Sunflower butter or peanut butter
- Honey or date syrup – while honey does taste better in these cookie dough bites, date syrup and maple syrup both work just as well. Keep in mind that if you use date syrup, it will make the cookie dough much darker in color.
- Vanilla extract or vanilla paste
- Kosher salt

- Is is safe to eat raw cookie dough? This recipe is made without eggs and uses oat flour and almond flour. Both of which are safe to eat raw. So yes, it’s safe to eat!
- Can I skip the chocolate coating? Absolutely! These vegan chocolate chip cookie dough bites are insanely good on their own. The chocolate coating is just the cherry on the top!
- Why is my cookie dough dry? If the dough is too dry, you’ve most likely over-measured the flour. Add in a splash of extra cashew milk to help it moisten up.
- Can I make these cookie dough bites vegan? Absolutely! These healthy cookie dough bites can easily be made vegan. Simply swap the honey out for date syrup or maple syrup. Keep in mind that if you use date syrup, the color of the dough will be more brown than golden.
Expert Tips
- Coating the cookie dough bites in the chocolate can get pretty messy; I recommend using two forks to dip the cookie dough bites in the bowl of chocolate. Then gently roll the dough around until it’s completely coated.
- On the subject of messy chocolate, make sure to have your cookie sheet lined with parchment paper prepped before you start coating the bites in chocolate.
- While you don’t need to add any toppings to the bites, I like adding a sprinkle of flaky salt on top. That said, add the salt before you place the cookie doubt bites in the freezer. This will help the salt adhere to the frozen chocolate.
- If your chocolate seems too thick after you’ve melted it, add in 1/2 tsp of coconut oil to help thin it out.
- To get the drizzle chocolate look in the picture above, let the chocolate covered bites set in the fridge for 30 minutes. Then drizzle eat bite with chocolate in a back-and-forth motion using a spoon. Let the bites set in the fridge for an additional 30 minutes.
Storage Tips
These easy vegan cookie dough bites should be stored in a glass tupperware in the fridge. If you want, you can also stick these in the freezer — they taste like cookie dough ice cream out of the freezer.
Lastly, these bites should last up to 1 week in the fridge and freezer. After that, I feel like the flavor tends to taste stale and dull. However, I’m sure you’ll eat these up waaaay before then!
Are These Cookie Dough Bites Even Healthy?
While I acknowledge that ‘healthy’ is a term that everyone will define differently, I truly believe that these cookie dough bites are healthy.
Unlike the store-bought version, this cookie dough bite recipe uses whole-food ingredients, has no fillers, gums, additives, or preservatives.

- Sunflower butter – provides over half the RDI of Vitamin E in just 1 tbsp. Vitamin E is amazing for your skin and helps produce collagen, keep your skin moisturized and wrinkle-free! Additionally, sunflower seeds have a host of vitamins and minerals, like magnesium, manganese and zinc.

Description

Ingredients
- 1/2 cup Sunflower butter (sub with peanut butter)
- 1/2 cup Honey or Maple syrup
- 1 tbsp Vanilla extract
- 1 tsp Kosher salt
- 1 1/2 cups Oat flour
- 1 cup Blanched Almond flour
- 2 cups Chocolate chips (reserve 1 cup for melting)
Instructions
- Begin by lining a small tray or plate with parchment paper. Make sure that you’ll be able to fit this tray/plate in your freezer. Set aside.
- Add the sunflower butter, honey, vanilla extract, and salt into a bowl, whisk well.
- Sprinkle in the oat flour and almond flour. Using a spatula, fold the flour into the wet mixture until combined. You may have to use your hands to fully mix the dough. Finally, pour in the chocolate chips and mix to combine. Again, you may have to use your hands!!
- Dump the dough out onto a clean surface (either your counter or a cutting board) and roll out into a square-shaped log. Using a knife, cut the dough in half and then quarters, both lengthwise and crosswise. You should have 16 sections of dough once you’re done. Take one section, roll it into a ball, and place on the prepared sheet pan. Continue this process until all the bites are rolled.
- Next, add the remaining 1 cup of chocolate chips into a heatproof bowl or ramekin and pop in the microwave for 30 seconds. Remove and stir the chocolate. Repeat this process two more times until the chocolate is melted and silky smooth. If the chocolate seems too thick, add ½ tsp of coconut oil to thin it out. Optionally, you can melt the chocolate over a double boiler as well.
- Using a pair of forks, carefully dip one of the cookie dough bites into the melted chocolate, gently rolling the ball to coat it thoroughly in the chocolate. Lift the cookie dough bite out of the chocolate, let the excess chocolate drip off, and place it back on the parchment lined tray. Repeat with the rest of the bites. Sprinkle a bite of flaky salt on top of each bite for presentation.
- Pop the tray of cookie dough bites in the fridge for 30 minutes, or freezer for 15 minutes, until the chocolate has completely set. From here, you can transfer the bites into a glass container and store them in the fridge for up to 5 days.
