Inspired by everyone’s favorite cinnamon bun, this toast is spread with a generous layer of vanilla cream cheese, topped with a thick and gooey cinnamon sugar syrup and topped with crushed pecans for extra crunch! This cinnamon roll toast is sure to banish any mid-week cravings for a cinnamon roll, because it tastes exactly like one, just much healthier and easier!

Cinnamon Roll Toast Ingredients
I’ll leave the full list of ingredients for this Mocha Baked Oats recipe here, along with substitutions for certain ingredients and what you can use instead!
- Ezekiel Bread: I prefer using Ezekiel Bread, as the grains and wheat used to make it are sprouted. This helps it digest better and makes it easier for your body to absorb nutrients from those grains.
- Vegan Cream Cheese: I like Kite Hill vegan cream cheese, as it tastes the closest to a traditional dairy cream cheese. Linked here.
- Almond Butter: help replace the butter that would be in a traditional cinnamon sugar paste. Plus, it adds in extra protein!
- Date syrup: will replace the sugar in this cinnamon roll toast and make it refined sugar-free, as well as secretly packed with some extra nutrients from the dates.
- Ceylon Cinnamon: because you can’t make a cinnamon roll toast without cinnamon. I like using ceylon cinnamon as it has a sweeter flavor than other cinnamon varieties, but go with whatever cinnamon you have on hand.
- Cashew Milk: I personally like using cashew or almond milk, but any kind of plant milk will work well. Cashew milk is what will be used to thin out the paste to make it spreadable. It also helps replace the butter that would traditionally be used in a conventional frangipane paste. I recommend using a higher fat milk, like cashew, coconut, macadamia or soy milk. The higher the fat and protein content, the creamier the paste will be. I’ll link my homemade cashew milk recipe here – it takes just 2 minutes to whip up.
Can I Substitute…
- Vegan Cream Cheese: Feel free to use any brand of vegan cream cheese you like. Additionally, a tangy and thick vegan greek yogurt will also work well as a substitute.
- Cashew Milk: any type of high fat milk will work – macadamia, soy and coconut are the ones I’d recommend.
- Almond Butter: While you would lose out on the extra almond flavor, you can substitute the almond butter for any nut butter of choice, like cashew butter, tahini, sun butter etc.
- Date Syrup: Honey, maple syrup or a sugar-free syrup all work as great substitutes to date syrup.
How to Make this Cinnamon Roll Toast
I get it! You’re in a hurry, it’s getting late and you want to make this cinnamon roll toast recipe as fast as possible. So I’ll outline my strategy for making this easy toast as quickly as possible.
- Begin by toasting the ezekiel bread. While it’s toasting make the cream cheese spread and the cinnamon syrup.
- In a bowl, add the cream cheese, vanilla extract and salt. Stir to combine. In a separate bowl, add in the almond butter, date syrup, cinnamon, salt and cashew milk. Whisk all of the ingredients together until a thick syrup forms.
- At this point the bread should be golden brown and crisp. Spread a generous portion of the cream cheese on the toast, about ½ of the cream cheese mixture per slice of bread, and top each piece of toast with a generous drizzle of the thick cinnamon sugar syrup.
- Finally, top each piece of toast with chopped pecans for some extra crunch. Enjoy immediately. You can even pop the finished toast into the oven or toaster oven for 2 minutes to warm them up even more. The warmer the toast, the more it tastes like a cinnamon roll.

This cinnamon roll toast is packed with protein, dates, almonds and cinnamon which are all linked to a host of benefits. I’ll leave a few benefits of each of these ingredients down below:
- Dates (date syrup): Where to begin – dates have so many benefits, such as antioxidants, antibacterial properties, and a host of vitamins and minerals that are essential. Dates have a compound called phenolic that have shown to be effective in reducing bacteria growth. This means that dates will help you strengthen your immune system. Lastly, dates have vitamins X, B6, and A which are essential to the body!
- Almonds (almond butter): have a host of vitamins and minerals, with high concentrations of Vitamin E. Just 1 ounce of almonds provides 37% of the RDI. Several studies have linked Vitamin E intake with lower risk of heart disease, cancer and Alzheimers. They are also a great source of healthy fats, manganese and magnesium, which are all great for reducing blood pressure levels.
- Ezekiel Bread: I prefer using Ezekiel Bread, as the grains and wheat used to make it are sprouted.
