Description

Say goodbye to overpriced soupy acai bowls, and hello to this thick and creamy acai bowl. It’s vibrantly purple, packed with acai flavor and has the same exact texture as ice cream.

Ingredients

Scale
  • 2 packs frozen Unsweetened Sambazon Acai
  • 2 medium frozen Bananas
  • ⅓ cup Cashew milk
  • 1 tsp Vanilla extract or Vanilla paste
  • Pinch of kosher salt
  • Granola, sunflower butter and cacao nibs for topping ((linking the granola recipe I used here))

Instructions

  1. Simply blend all of the ingredients together until the acai looks smooth, creamy and thick. This process will take about 3-4 minutes, so just be patient and stop the blender as needed to scrap down the sides. Or if you’re using a Vitamix, use your tamper to tamp down the mixture and pop any air bubbles.
  2. Once the acai is done blending, pop into a bowl and top with granola, sunflower butter (or peanut butter) and cacao nibs.

Notes

Pro tip, I like to freeze my bowl ahead of time, that way the acai doesn’t melt while I’m eating it.
