This healthy acai bowl recipe has no added sugars and is naturally sweetened with banana. Plus, it’s a nutrient powerhouse, thanks to the acai, banana, and sunflower butter.
What is Açaí?
Acai is a small purple berry that is native to the Amazon region. It’s packed with tons of antioxidants and is basically a nutrient powerhouse.
And if you’re thinking acai is a sweet sugary fruit, think again. Because this fruit is actually primarily fat, and loaded with healthy omega-rich fats and fiber.

Açaí Bowl Ingredients
Here’s everything you’ll need to make this easy acai bowl recipe.
- Acai: I like getting the unsweetened acai packs from Sambazon. They’re unsweetened and as minimally processed as possible. Plus, they’re USDA organic as well!
- Banana: Make sure they’re fully frozen (for at least 24 hours) and very ripe for optimal texture and sweetness.
- Cashew milk: You can use any plant milk you like, but I like the richness of the cashew milk in this bowl.
- Vanilla extract: Just for a little extra flavor
- Kosher salt: If you know me, you know I always add salt to my sweet recipes to bring out flavors and boost the sweetness naturally!
Tips and Tricks
Listing some of my top tips for getting that super thick ice-cream-like texture!
- Use minimal liquid. I typically use ⅓ cup of cashew milk to ensure that the acai bowl remains thick and has an ice-cream like texture.
- Use a 1:1 ratio of frozen banana to acai packs. The frozen bananas help naturally sweeten the bowl, add creaminess and ensure you get that super thick texture.
- Make sure to use 2 packs of acai in your bowl to get that vibrant purple color.
- Low and slow is the key to getting a thick smoothie without any lumps. I typically blend my acai bowls on a super low speed for around 3-4 minutes to ensure there are no lumps. Additionally, blending low and slow will ensure the blender doesn’t heat up too much and melt the acai, making it soupy.
- Freeze your bowl ahead of time or use a coconut bowl. That way your acai doesn’t melt while you’re eating it.
- Add peanut butter into the blender for a peanut butter acai bowl. This is one of my best kept secrets to making a dessert-like acai bowl. I not only top the acai bowl with peanut butter, I also blend it into the bowl as well. Trust me, it tastes 20x better like this!
- Feel free to add protein powder into this recipe to make a high protein acai bowl that’s perfect for after a workout or long weekend hike.
Açaí Bowl Toppings
My favorite toppings for this acai breakfast bowl is a combination of my homemade cereal, cacao nibs, hemp seeds and a large dollop of sunflower butter.
Obviously top this bowl with whatever you like, but this is my preference that I believe tastes best (granola tastes good on just about everything haha).
Coconut flakes also taste amazing on this vegan acai bowl as well!

Ingredients
- 2 packs frozen Unsweetened Sambazon Acai
- 2 medium frozen Bananas
- ⅓ cup Cashew milk
- 1 tsp Vanilla extract or Vanilla paste
- Pinch of kosher salt
- Granola, sunflower butter and cacao nibs for topping ((linking the granola recipe I used here))
Instructions
- Simply blend all of the ingredients together until the acai looks smooth, creamy and thick. This process will take about 3-4 minutes, so just be patient and stop the blender as needed to scrap down the sides. Or if you’re using a Vitamix, use your tamper to tamp down the mixture and pop any air bubbles.
- Once the acai is done blending, pop into a bowl and top with granola, sunflower butter (or peanut butter) and cacao nibs.
Notes
Pro tip, I like to freeze my bowl ahead of time, that way the acai doesn’t melt while I’m eating it.
