Description

Introducing these blueberry baked oats that taste exactly like a Starbucks blueberry muffin. What more could you want for breakfast?


Ingredients

Scale
  • ½ cup Oats, ground into a fine flour ((or ½ cup oat flour))
  • 1 scoop Vanilla protein powder
  • 3 tbsp Blueberries ((fresh or frozen both work))
  • ½ tsp Baking powder
  • ¼ tsp Baking soda
  • ⅛ tsp Pinch of salt
  • ½ cup Cashew milk
  • 1 tbsp Honey
  • ½ tsp Vanilla extract
  • ½ tsp Lemon juice

Instructions

  1. Begin by preheating the oven to 350°F and grease a ramekin with cooking spray. 
  2. In a bowl, add the ground oats (or oat flour), protein powder, frozen blueberries, baking powder, baking soda and salt. Mix well.
  3. Then pour in the cashew milk, honey, vanilla extract and lemon juice and whisk well. The batter should look like thick waffle batter. If the batter seems too dry, add in a dash more cashew milk. If the batter looks too runny, add in some more oat flour or protein powder. 
  4. Pour the batter into the prepared ramekin and top with additional blueberries and a sprinkle of coconut sugar. Then bake in the oven for 20-25 minutes until puffed and golden brown. Let cool for 2 minutes and enjoy!
