There are endless applications for ground beef, but these homemade sweet fennel beef sausages are my go-to when I want something quick and easy. 

The flavor profile is definitely fennel-forward, with a touch of sweetness from the honey and heat from the Aleppo pepper. Couldn’t love these more!

Homemade Fennel Beef Sausage Ingredients

  • Ground beef: Quick note on the ground beef. Sourcing quality meat is so important to me; we have two gals that are local to us that we get our meat (beef, chicken, and lamb) from. The taste, quality, and absolutely everything about their meat is amazing!
  • Honey or maple syrup: Both work great — the maple version tastes similar to a breakfast sausage.
  • Diamond Crystal kosher salt:
  • Olive oil: Feel free to swap in avocado oil, melted butter, or even melted ghee. 
  • Aleppo pepper or silk chili: Red pepper flakes also work, they just don’t have the same fruitiness that Aleppo pepper has.
  • Dried Italian herbs: As long as the Italian blend you use has oregano, thyme, basil, rosemary, and marjoram, you’re golden!
  • Ground fennel seeds: I use my spice grinder to blitz up the fennel seeds — grinding the fennel seeds makes them even more aromatic and pungent.
  • Fresh garlic
  • Onion powder
  • Cayenne pepper: This is totally optional, but I like adding a little cayenne pepper for added heat.
  • Ground cumin

Notes 

  • Store any leftovers in a glass container in the fridge, they’ll keep well for up to 3 days. To reheat, pop them in the oven at 400°F on a sheet pan. 
  • I love to slice up any leftover fennel beef sausage into coins, reheat them in my toaster oven, and then add them to this fennel soup. Reheating the sliced sausage in the toaster oven gets all the crags and edges of the sausage super crispy – it’s heaven!

Ingredients

  • 1 lb ground beef
  • 2 tbsp honey or maple syrup
  • 23 tsp Diamond Crystal kosher salt
  • 2 tbsp EVOO, avocado oil, or melted butter
  • 2 tsp Aleppo pepper or Silk chili
  • 2 tsp dried Italian herbs
  • 2 tsp fennel seeds, ground
  • 1 garlic clove, finely minced or grated
  • 1/2 tsp onion powder/granules
  • 1/2 tsp cayenne pepper (optional)
  • 1/2 tsp ground cumin


Instructions

  1. Preheat the oven to 450°F . Quick note, I used the air-fry setting on my toaster oven – which is just 450°F convection.
  2. Mix together all the ingredients in a metal bowl until thoroughly combined. Then, using about 2 tbsp of the ground beef mix, form into sausages and place on a half-sheet pan. Quick note, don’t line the sheet pan with parchment or foil, the sausages won’t crisp up well.
  3. Bake the sausages for 11-12 minutes or until slightly crisp on the top. They will release a fair amount of water/oil – this is totally normal.
