Ingredients You’ll Need
Here’s your grocery list for this peanut salad dressing recipe, along with a few suggestions and substitution ideas. Keep in mind that the full recipe is in the recipe card below.
And yes, this is one of those dressing recipes with a long list of ingredients, but don’t let that deter you. Because this dressing couldn’t be easier to make!
- Peanut Butter – I don’t do well on peanut butter, so I like to use sunflower butter instead. It has the same flavor as peanut butter as well!
- Honey – feel free to use maple syrup or date syrup if you want to make this dressing completely vegan
- Amino Acids or Soy Sauce — I like using Bragg’s
- Rice vinegar – if you don’t have this, don’t sweat it. While the rice vinegar does add flavor, it’s not an integral component of the thai peanut dressing.
- Lemon juice
- Fresh Garlic and Ginger
- Spices
How to Make this Peanut Dressing
Most salad dressings are packed with calories and unnecessary sugar and oils. But this vegan thai peanut dressing recipe couldn’t be healthier. It’s made with whole-foods and relies on honey to naturally sweeten the dressing.
Here’s how to make it — it couldn’t be easier.
- Add the peanut butter or sunflower butter into a bowl, along with the honey, amino acids, lemon juice, rice vinegar, garlic, ginger and spices. Give this a good mix. Note that the dressing will almost look like it’s separated, but don’t worry, this is totally normal.
- Next pour in the water and gently whisk to combine. Continue to whisk until the water is completely mixed into the dressing. If the peanut dressing is still too thick, continue to whisk in tiny amounts of water until it reaches a consistency you like.
- Once the dressing has become silky smooth and dark in color, it’s done. Adjust for salt before using!
How to Store this Dressing
I love prepping this raw peanut dressing recipe and storing it in the fridge so I can toss it on some cabbage or noodles as a quick dinner.
Simply pop the peanut dressing in a glass container and store it in the fridge for up to 3 days. Any longer than that and the lemon juice will start to change the flavors of the dressing.
Ideas for Using this Peanut Dressing
One of the best things about this vegan peanut ginger dressing recipe (besides tasting fabulous) is that it’s super versatile! I’ll list a few of my favorite ways to use this dressing below!
- This thai peanut salad is one of my favorite ways to use this dressing
- While I don’t have an official recipe, I love tossing some brown rice noodles with this dressing, green onions and sesame seeds as a quick dinner. Feel free to add in some thinly sliced cabbage and bok choy for some greens!
- This peanut dressing is also a great marinade for tofu or tempeh. You can use this tofu recipe as a starting point, but just cook it in the peanut dressing.
- Lastly, this peanut sauce can also double as a dipping sauce for crispy tofu (or chicken).
