These vegan chocolate donuts are packed with tons of flavor, fudgy chocolate flavor and a secret ingredient that boosts that chocolate flavor through the roof. And get this, they’re healthy! Packed with oats, cocoa powder and vegan greek yogurt, these baked donuts are nutrient and vitamin packed – so you can absolutely call these breakfast.
What You’ll Need to make these Vegan Baked Donuts
Now that you’ve read just how good these chocolate glazed donuts are, let’s go over the ingredients you’ll need.
The list of ingredients is super simple and mostly pantry friendly staples I’m sure you will already have. I’ve included both metric and cup measurements in the recipe card at the bottom of this post. Typically, using the gram measurements will give you the most accurate bake!
Vegan Baked Donuts
- Rolled oats: Feel free to use any rolled or quick oats you have on hand as they’ll be ground into a flour anyway. Also, feel free to just use the same amount of oat flour is you have that instead!
- Spelt Flour: I recommend using spelt flour in this recipe rather than all-purpose simply because spelt flour has so much more flavor and fiber in it. That being said, feel free to use all-purpose flour, a GF 1:1 baking flour or whole wheat flour as a substitute. Make sure the GF flour you’re using has xantham gum as this will help replicate that glutinous structure!
- Coconut sugar: just enough for some added sweetness. If you want to keep this completely sugar-free feel free to use a Monk fruit sugar blend. However, coconut sugar is just so delicious, healthy and has so much flavor that regular cane sugar.
- Cocoa powder: I highly recommend using cocoa powder over cacao powder. Cacoa powder tends to not have the same fudgy chocolate flavor that a cocoa powder has. However, cacao powder does have the benefit of adding in extra nutrients to the bread.
- Instant Coffee Powder: the secret ingredient to boosting that chocolate flavor! Feel free to use Dandy blend instead if you don’t drink coffee. However, I highly recommend not skipping this ingredient as it really adds that extra flavor boost to the donuts!
- Plant-based milk: I personally like using a cashew or almond milk, but any kind of plant milk will work well.
- Unsweetened Greek Vegan Yogurt: This is super important as it will help simulate an egg and replace the oil in the recipe. Additionally, like an egg it helps hold the donut together!
Chocolate Glaze Ingredients
- Cocoa powder: I highly recommend using cocoa powder over cacao powder. Cacoa powder tends to not have the same fudgy chocolate flavor that a cocoa powder has. However, cacao powder does have the benefit of adding in extra nutrients to the bread.
- Coconut sugar: just enough for some added sweetness. If you want to keep this completely sugar-free feel free to use a Monk fruit sugar blend. However, coconut sugar is just so delicious, healthy and has so much flavor that regular cane sugar.
- Boiling water: This is so important to get that glossy finish in the glaze. Plus, the hotter the water, the easier it is to dissolve the cocoa powder!
How to Make these Chocolate Glazed Donuts
As I mentioned above, this bread is so easy to whip up and needs only one bowl, plus a loaf pan. You’ll end up with moist and fudgy chocolate glazed donuts that you won’t believe are actually healthy!

- Donut Batter: Begin by combining the dry ingredients together and then pour in the wet ingredients. Whisk to combine. It’s that easy.
- Fill the Donut Cavities: You can optionally transfer the batter to a ziplock bag with a hole cut in it, or a piping bag to fill the donut pan, however, I think a spoon works the best. Simply spoon about 3 tbsp worth of the batter into the donut cavities. Filling just up to the top.
- Bake: This takes only 12 minutes, so fast! Be sure to let the donuts cool on a wire rack. Allowing them to cool out of the pan will ensure that they don’t become soggy from the steam they create after baking!

- Glaze the Donuts: Dip each donut in, twisting the donuts as you take them out to get off excess glaze. Let them dry on a wire rack. Finish the donuts off with a sprinkle of flaky sea salt!
How to make these Chocolate Glazed Donuts GF
To make the donuts gluten-free substitute the rolled oats with gluten-free oats. Bob’s Red Mill sells GF Rolled oats for a great price if you are looking for a source. If you have a severe gluten allergy, I would suggest using a 1/3 cup of a gluten-free flour blend instead. Substitute the spelt flour with a gluten-free flour blend as well.
How To Store These Donuts
I typically will just cover the donuts with plastic wrap and store them on the counter for up to 3 days – although it usually doesn’t last that long.
You can also store these donuts in the fridge for up to 5 days or even in the freezer for 1 month.
When reheating the donuts, simply pop it into the oven or your toaster oven at 350F for a 1-2 minutes! I love topping it with some nut butter as well for some peanut butter cup vibes!

Ingredients
Vegan Chocolate Baked Donuts
- 1 cup (80g) Rolled oats, ground into a fine flour ((replace with equal amount of oat flour))
- ½ cup (60g) Spelt flour
- 4 tbsp (35g) Cocoa powder
- 1 tbsp (14g) Coconut sugar or granulated Monk fruit sugar ((you can omit this and just use stevia drops as well))
- 2 tsp Instant coffee powder ((replace with Dandy blend, see notes*))
- 1 tsp Kosher Salt
- 1 tsp Baking powder
- ½ tsp Baking soda
- 3 tbsp (79g) Vegan Greek Yogurt
- 1 ¼ cup (260g) Cashew or Almond milk
- 1 tsp Apple cider vinegar or Lemon juice
- ½ tsp Vanilla extract ((optional))
Chocolate Glaze
- ¼ cup (35g) Cocoa powder
- 2 tsp Coconut sugar
- ¾ cup (240g) Boiling water ((use more as needed to thin the glaze))
Instructions
- Preheat your oven to 350°F (180°C) and grease a donut pan with cooking spray.
- Mix together the spelt flour, oat flour, cocoa powder, baking powder, baking soda, salt, instant coffee powder and coconut sugar. Pour the almond milk and vegan greek yogurt into the dry ingredients. Mix thoroughly.
- Add about 3 tbsp worth of the batter into each donut cavity and bake for 13-15 minutes until puffy and just brown. While the donuts bake, make the chocolate glaze.
- Begin by adding the cocoa powder, coconut sugar and boiling water into a bowl. Whisk well with a metal whisk until the glaze is silky smooth and there are no cocoa powder lumps left. You may need to add in more boiling water to thin out the glaze if it's too thick. It should easily drip off the whisk or spatula! Otherwise it won't glaze the donuts nicely.
- Once the donuts are done baking, let cool for 5 minutes in the pan, then remove and dip in the chooclate glaze. Finish the donuts with a light sprinkle of flaky salt. Enjoy! Store the donuts at room temp or in the fridge in an airtight glass container.
