Description

This bowl of peaches and cream oatmeal is exactly what any sweet tooth lover needs. Think creamy almond oats topped with a slices of caramelized peaches and creamy, cold coconut yogurt. Plus, this bowl is packed with protein, healthy fats and tons of omega 3’s! 


Ingredients

Oatmeal

  • ¼ cup Rolled oats
  • ¼ cup Quick oats ((feel free to use all rolled oats, I like the texture of using both varieties of oats))
  • 1 scoop Vanilla protein powder ((optional))
  • ¼ tsp Kosher Salt
  • 1 cup Cashew milk + ½ cup Water
  • ½ tsp Almond extract
  • 1 tbsp Almond butter

Toppings

  • 1 medium Peach, sliced thinly
  • 3 tbsp Coconut yogurt
  • 1 tbsp Flaked almonds

Instructions

  1. Add all of the oatmeal ingredients into a pot and bring to a boil. Once the oatmeal begins boiling, stir it, and turn the heat down to low.
  2. Simmer the oatmeal, stirring occasionally until the oatmeal has thickened and become creamy. Pour it into a bowl and set aside.
  3. In the same pot, add the sliced peaches and a splash of water. Cook the peaches on medium-high heat, until the peaches release their juices and become super soft.
  4. Add the peaches and their juice on top of the oatmeal, along with a large dollop of coconut yogrut. Sprinkle some flaked almonds on top of the oatmeal bowl and enjoy! If you want the oatmeal sweeter, feel free to add a drizzle of honey or date syrup on top!
