Description
This bowl of peaches and cream oatmeal is exactly what any sweet tooth lover needs. Think creamy almond oats topped with a slices of caramelized peaches and creamy, cold coconut yogurt. Plus, this bowl is packed with protein, healthy fats and tons of omega 3’s!

Oatmeal
- ¼ cup Rolled oats
- ¼ cup Quick oats ((feel free to use all rolled oats, I like the texture of using both varieties of oats))
- 1 scoop Vanilla protein powder ((optional))
- ¼ tsp Kosher Salt
- 1 cup Cashew milk + ½ cup Water
- ½ tsp Almond extract
- 1 tbsp Almond butter
Toppings
- 1 medium Peach, sliced thinly
- 3 tbsp Coconut yogurt
- 1 tbsp Flaked almonds
Instructions
- Add all of the oatmeal ingredients into a pot and bring to a boil. Once the oatmeal begins boiling, stir it, and turn the heat down to low.
- Simmer the oatmeal, stirring occasionally until the oatmeal has thickened and become creamy. Pour it into a bowl and set aside.
- In the same pot, add the sliced peaches and a splash of water. Cook the peaches on medium-high heat, until the peaches release their juices and become super soft.
- Add the peaches and their juice on top of the oatmeal, along with a large dollop of coconut yogrut. Sprinkle some flaked almonds on top of the oatmeal bowl and enjoy! If you want the oatmeal sweeter, feel free to add a drizzle of honey or date syrup on top!
