Vegan Mint Chip Smoothie

Description

Introducing the easiest breakfast! A creamy mint chip smoothie. It’s rich, minty, fresh, creamy and packed with tons of protein. And, it’s secretly got some greens sneaked in! 


Ingredients

Scale
  • 1 cup Cashew milk
  • 2 cups Spinach, loosely packed
  • ¼ cup fresh Mint Leaves
  • 2 frozen Bananas
  • 1 scoop Vanilla protein powder ((see notes))
  • ¼ tsp Mint extract
  • ⅛ tsp Salt
  • 1 Tbsp Cacao nibs

Instructions

  1. Add all of the ingredients to a blender, except the cacao nibs and begin blending on low and then slowly turn the speed up to high. Continue blending for about 2 minutes, up to 3 minutes, or at least until the smoothie is homogenous and super green. Then pop in the cacao nibs and blend an additional 20 seconds.
  2. Pour the smoothie into a cup and enjoy! If you want to get extra fancy, you can drip some melted chocolate down the sides of the glass and then pour in the smoothie.
