Mint Chip Smoothie Ingredients
- Frozen banana: is essential to making this smoothie thick, as well as acting as a natural sweetener.
- Spinach: feel free to use any greens you like, such as arugula, kale etc. But spinach is great in smoothies since the flavor gets masked by the other ingredients.
- Fresh mint: without fresh mint you can’t really make this smoothie – it’s an essential ingredient.
- Protein powder: this is totally optional, but helps make the smoothie more balanced and filling. I like opting for a protein powder that’s unsweetened to cut down on any added sugars or artificial sweeteners. But, any protein powder you like will work well.
- Milk: use any plant milk you have on hand, such as cashew milk, almond milk, soy milk etc. If you want to reduce the calories in this smoothie you can opt for using all water.
- Mint extract: This is technically optional, but if you have it on hand, definitely use it. Mint extract adds in so much more flavor not to mention that freshness that you sometimes can’t get from the fresh leaves alone!
How to Meal-Prep this Vegan Green Smoothie
Super simple. Just add the frozen banana portion into a container, along with the spinach and mint leaves. Then, when you’re ready to blend this smoothie up in the morning, you just have to pop it in the container, along with the milk and protein powder and you’re done! Essentially, popping a bag of the frozen ingredients will help you save on time. Plus, you can prep multiple bags at a time so that you always have a quick smoothie on hand whenever you need it!
How to into a Smoothie Bowl/Nice Cream
If you wanted to make this recipe into a nice cream bowl, it couldn’t be easier. Simply reduce the milk but about ⅓. So instead of using 1 cup of milk, use ⅓ cup.
You may need to adjust this proportion, by adding a but more liquid at a time until you achieve the consistency you like. Additionally, if you don’t have a high-powered blender, you may need to add more milk to get it to blend properly.
Either way, the only thing you need to change is reducing the milk by ⅓ and then you’ll have a mint chip smoothie bowl. To cover with all the toppings of course!

Why this Mint Chip Smoothie is Healthy
A thick and creamy mint chip smoothie cacao nibs…is this actually healthy? DEFINITELY!
This mint chip smoothie is packed with protein, nutrients, and two servings of fruits, thanks to both the bananas. I’ll leave a few of the benefits of each of these ingredients down below.
- Bananas: despite being a fruit, bananas contain tons of prebiotic fiber and resistant starch, which makes this a low GI fruit. GI, glycemic index, is an indicator of how fast the sugar of that particular food will enter your bloodstream! One fiber banana is called pectin, which helps moderate blood sugar spikes – so cool! Plus, bananas have tons of Vitamin B6, Vitamin C, and Potassium.
- Spinach: while 1 cup of packed spinach might not seem like much, it doesn’t have much calories, it’s packed with a ton of nutrients. It has over 150% of the daily need for bone-supporting vitamin K, 50% of the RDI for Vitamin A, and about 20% of the RDI for Vitamin C. Both vitamin A and C support healthy skin (hello dewy skin) as well as immune system support. Additionally, you can see eating spinach as a preventative. One antioxidant in spinach, lutein, has been shown to reduce the risk of an eye disease, macular degeneration, which makes things appear blurry. This disease is especially prevalent in older folks – so essentially by eating spinach you’re helping reduce your risk of bad vision later in life!
- Mint: is a great source of Vitamin A, a fat-soluble vitamin that is critical for eye health and night vision. And, since I’ve made sure to include a fat source in this smoothie (the cashew milk) you’ll reap all the benefits of this! Additionally, mint also has tons of antioxidants which protect your body from oxidative stress. Essentially, antioxidants help fight/kill free radicals, cancer causing cells!

Description

Ingredients
- 1 cup Cashew milk
- 2 cups Spinach, loosely packed
- ¼ cup fresh Mint Leaves
- 2 frozen Bananas
- 1 scoop Vanilla protein powder ((see notes))
- ¼ tsp Mint extract
- ⅛ tsp Salt
- 1 Tbsp Cacao nibs
Instructions
- Add all of the ingredients to a blender, except the cacao nibs and begin blending on low and then slowly turn the speed up to high. Continue blending for about 2 minutes, up to 3 minutes, or at least until the smoothie is homogenous and super green. Then pop in the cacao nibs and blend an additional 20 seconds.
- Pour the smoothie into a cup and enjoy! If you want to get extra fancy, you can drip some melted chocolate down the sides of the glass and then pour in the smoothie.
