Why You’ll Love This Vegan Soft Serve
While most people will use mango as an alternative to banana, if you’re trying to make a vanilla or cookie monster soft serve, the mango will overpower the flavors. Which is where frozen cashew milk comes into play!
Yes, you heard that right. Frozen cashew milk cubes are the perfect alternative to frozen banana and work just as well. Simply grab a thick cashew or coconut milk and pour it into an ice cube tray. Freeze the milk cubes overnight and use the following morning.
I have only tried the milk cube method with coconut and cashew milk. Because they have higher fat content, both of these milks work well. however, thinner less calorie-dense milks like almond and oat milk may not work as well. And, they might make the nice cream slushy or icy. So definitely make sure you are using a fatty and thick plant milk.
Vegan Soft Serve Toppings
I chose to use crumbled cookie crisps (think Chips Ahoy) but a homemade version. I’ll link the recipe in the recipe card if you want to also use homemade cookie crisps. Otherwise, I would recommend Hu Kitchen Cookies, they are pretty wholesome and use coconut sugar as a sweetener.
How To Make Cashew Milk Cubes
Making cashew milk cubes is super easy, especially if you’re using a store bought milk. I’ll walk you through the steps of making the milk from scratch as well with an alternative if you’re using store-bought milk.
- Start by making the milk base. Since this will be used as an alternative to banana, the goal is to make the milk as creamy as possible. If you aren’t using fruit, the best way to add creaminess is by using something with a high fat content and moderate protein…aka nuts!
- I like using cashews as they have the best flavor and texture for a thick soft serve, but almonds work just as well, as does coconut milk.
- Begin by adding 1/3 cup raw, soaked cashew into a blender, along with 1/2 scoop vanilla protein powder, a pinch of salt, vanilla extract and 1 cup of water. You can also make any other type of nut milk you like, click here to check out my ultimate guide on making creamy nut milks!
- Blend all of the ingredients together until it’s super smooth and creamy. This is the nut milk base for the nut milk cubes.
- Pour the cashew milk into an ice cube tray and freeze overnight. That’s it.
How To Make Cashew Milk Cubes With Store-Bought Milk
If you’re using store bought milk there are a few things to look at for to ensure you get the same creamy thick soft serve results.
- Choose a thick and higher fat milk. Coconut milk, Cashew milk, or even a Macadamia nut milk all work well.
- Avoid lower calorie milks. This means that the milk has less fat, and will not make your soft serve creamy.
- Choose an unsweetened nut milk. This is purely for health reasons. Most nut milk have added cane sugar or other additives that are just not good for you. Additionally, look out for any fillers or gums, like tapioca starch or xantham gum.
- The BEST alternative is to use canned coconut cream and blend the whole can with 1/2 cup water. Then pour it into the ice cube tray and freeze. This is the same exact thing as coconut milk, just much creamier and without any sugars or additives.

Description

Ingredients
Cashew Milk Cubes
- 1 cup (237ml) Water
- ⅓ cup (43g) Cashews, raw
- ½ tsp Vanilla extract
- Pinch of salt
Cookie Monster Soft Serve
- 2 cups Frozen Cashew milk cubes ((this is the entire serving of the recipe above))
- ⅓–½ cup (81g-121g) Cashew milk or any plant milk
- ¼ block (100g) Silken Tofu
- ½ scoop (12g) Vanilla protein powder
- 2 tsp (3g) Blue spirulina
- 2 tsp (14g) Date syrup or Honey ((sub with any liquid sweetener or 1 whole date, adjust the sweetness to your taste!))
- Pinch of salt
Other – toppings
- 3–4 mini Cookie crisps ((see notes for the recipe) )
- 1 tbsp Cacao nibs ((can use chocolate chips instead as well))
Instructions
Frozen Cashew milk cubes
- Begin by making the nut milk cubes. In a blender, pour in the water, cashews, vanilla extract and salt. Blend until the milk is super smooth and creamy.
- Pour the milk into an ice cube tray and freeze overnight. Instructions for using store bought milk for the cubes are above. You can keep these cubes for future use, but this recipe will use all of them, so feel free to double the batch to have leftover nut milk cubes.
Cookie Monster Soft Serve
- Begin by adding all of the nut milk cubes into a blender along with the cashew milk, silken tofu, protien powder, blue spirulina, sweetener and salt. Start the blender on low, ramping up the speed to medium. Use a tamper for this as it will help the mixture blend evenly and pop any air pockets. If you need to, add additional milk to get the blender running.
- Once the soft serve is super creamy, and well blended, it is ready.
- Pop the cookie monster soft serve into a bowl, top with the cookie crisps and cacao nibs. Enjoy!
