Brownie Baked Oatmeal Heaven!
These Salted Caramel Brownie Baked oatmeal is so good and the perfect way to satisfy your sweet tooth for breakfast, or whip up after dinner for a quick mid-week treat!
This salted caramel brownie oatmeal requires just a few staple pantry ingredients: rolled oats, cocoa powder, plant milk, leaving agents and apple cider vinegar.
You will have to make the salted caramel, or you could use a store bought caramel or even a vegan dulce de leche. But that is it! Super simple ingredients for a super indulgent dessert…or breakfast!
What If I don’t want to make Salted Caramel?
If you don’t want to make salted caramel, my answer is to not make this salted caramel brownie oatmeal. I’m kidding! There are a host of store-bought options you can use that are SO good. I’ll leave a few of my favorites below:
- Store-bought Caramel sauce
- Date Paste – tastes so similar to caramel
- Sweetened Nut butter
- Nutella
- Dulce de Leche – make sure you buy a vegan one, as most have milk.
These are just a few suggestions, but I highly reccomend making your own vegan caramel. It is so easy, and great to have on hand to add on oatmeal, toast or nice cream!

The salted caramel I used in this baked oatmeal is so simple and easy to make. It takes just four pantry staples and 5 minutes of your time. I’ll link the recipe here for you to check out.
Helpful Tips for Fudgy and Fluffy Brownie Baked Oatmeal
- You can double or even triple the recipe if you want to meal prep for the week. I would just recommend leaving the cream cheese glaze separate ignorer to avoid soggy oatmeal later in the week…(insert sad face).
- What type of ramekin do I use? I used a mini ceramic ramekin from William Sonoma. However, any oven safe ceramic will work.
- Can you make this in microwave? I personally have never tried microwaving my baked oats, but it should definitely work. I would microwave the oats for about 2-3 minutes until puffed and the top starts to crack. A toothpick inserted inside should come out clean!
- Can I use Oat flour instead? Essentially, when you blend the rolled oats, you are making oat flour. So you should definitely be able to use oat flour instead. The amount might differ slightly, as rolled oats have more volume then oat flour, so you will have to adjust the liquid amount, decreasing it slightly!

Description
Fudgy chocolate cake stuffed with vegan salted caramel, topped with a sprinkle of flaky salt! And get this, there is NO SUGAR, no added oils and it's packed with nutrients. Sound like a dream right?
Ingredients
- ½ cup Rolled oats, ground into a fine flour ((sub with ½ cup oat flour))
- ½ scoop Vanilla protein powder ((sub with 2 tbsp oat flour instead) )
- ½ tsp Baking powder
- ¼ tsp Baking soda
- ¼ tsp Kosher Salt
- 1 tbsp Cocoa powder
- ½ cup Cashew milk ((any plant milk will work, add more milk if the batter is too thick, it should look like brownie batter))
- ½ tsp Vanilla extract
- ½ tsp Lemon Juice
- 5–6 drops liquid Stevia ((sub with sweetener of choice))
Other
- 1 tbsp Salted Caramel ((see notes below for recipe link) )
- Flaky salt ((optional) )
Instructions
- Preheat the oven to 350°F (180°C) and grease a small ramekin dish with oil.
- Add the oat flour, vanilla protein powder, cocoa powder, baking powder, baking soda and salt into a bowl and mix well.
- Pour the cashew milk, vanilla, apple cider vinegar and stevia into the oatmeal flour mixture and mix until just combined. Pour the batter into the prepared ramekin.
- Dollop a heaping tablespoon of salted caramel in the mdidle and gently cover with some of the oatmeal batter from the sides. Baked the oatmeal for 20 minutes until puffy and cracked on the top. Optionally, you can microwave the oatmeal for 3 minutes instead.
- Once the oatmeal is done baking, sprinkle with flaky salt and enjoy!
