Easy Melon Cooler

Description

This melon cooler is subtly sweet, with a light honeydew and cucumber flavor, plus a little hint of zesty sour lime. It’s the perfect cold summer sipper!


Ingredients

Scale
  • 1/2 medium honeydew, de-seeded and cubed 
  • 3 persian cucumbers, roughly chopped
  • 2 limes, juiced
  • 1 tbsp lime zest (about 1 medium lime)
  • 1/4 cup fresh mint leaves
  • Pinch of kosher salt
  • 2 cups water

Instructions

  1. Blend everything. Add all of the ingredients (honeydew, cucumber, lime juice and zest, mint, salt, and water) to a high-speed blender. Blend on medium-high for about 2-3 minutes until frothy.
  2. Strain and store. Strain the melon cooler over a bowl using either a nut milk bag or a fine mesh sieve*. Then pour the strained melon cooler into a glass jar and store it in the fridge for up to 3 days.

Notes

*Feel free to skip straining this – it doesn’t have much pulp to begin with and that way you’ll get all the fiber from the melon as well.
