Description
Introducing coconut matcha energy bites. These bites are full of tropical sweet coconut and green tea flavor. And covered in a generous amount of dark chocolate.
Ingredients

- ¼ cup Coconut yogurt ((sub with any vegan yogurt))
- 1 tbsp Honey
- 2 tsp Matcha
- ½ tsp Salt
- ½ tsp Vanilla extract
- ⅔ cup Coconut shreds
- ⅓ cup Almond flour
- ½ cup Chocolate chips
Instructions
- In a bowl, add in the coconut yogurt, matcha, salt and vanilla. Mix well. Then sprinkle in the coconut shreds and almond flour and mix again. The mixture should be slightly crumbly and sticky.
- Using about 1 heaping tablespoon of the mixture, roll it into a ball and set aside on a plate. Repeat until the energy bite mixture is used up.
- In a heat proof bowl, melt the chocolate chips. You can do so in the microwave or in a double boiler. Or, you can carefully heat up the chocolate in the oven. But you do need to be careful that the chocolate doesn't burn!
- Once melted, dip each ball into the melted chocolate, coating thoroughly and set back on a plate. Repeat with all the balls. Then place them in the fridge, uncovered, to chill for 5 minutes. That's it, there are ready!
- Store the coconut matcha energy bites in the fridge for up to 1 week.
