Description

If you love birthday cake flavors, you have to make these birthday cake baked oats. They’re fluffy, moist, super flavorful and everything you could want in baked oats.

Baked Oats

  • ⅔ cup Rolled Oats, ground into a fine flour ((sub with ⅔ cup oat flour))
  • ½ tsp Baking powder
  • ¼ tsp Baking soda
  • ¼ tsp Pink Himalayan Sea Salt
  • ½ cup Cashew milk
  • 1 tbsp Honey ((sub with 56 drops of liquid Stevia))
  • 1 tsp Lemon juice
  • ½ tsp Vanilla extract OR ½ tsp Vanilla Bean pulp
  • 2 tbsp Sprinkles, plus more for topping

Toppings

  • Coconut yogurt ((or any sweet, creamy vegan yogurt))
  • Honey

Instructions

  1. Begin by preheating the oven to 350°F and greasing a ramekin with cooking spray. 
  2. In a bowl, add the ground oats (or oat flour), baking powder, baking soda and salt. Mix well. Then pour in the cashew milk, vanilla extract and lemon juice and whisk well. The batter should look like thick pancake batter. If the batter seems too dry, add in a dash more cashew milk. If the batter looks too runny, add in some more oat flour.
  3. Finally, add in the sprinkles and fold into the batter. Pour the batter into the prepared ramekin and bake for 20-25 minutes until puffed and golden brown. Let cool for 2 minutes, top with creamy coconut yogurt and honey and enjoy!
