These strawberry rice krispie treats are a fun twist on a childhood classic! They’re loaded with crushed strawberries, honey, and tahini for the ultimate no-bake summer dessert!!
Plus, these rice krispies don’t use any marshmallows and instead rely on a mixture of tahini and honey to bind everything together and replicate the ooey-gooey texture of marshmallows. With the added bonus of making these treats nutrient-dense and full of healthy fats!

Strawberry Rice Krispie Ingredients
- Brown rice cereal: My go-to brand is One Degree Organics brown rice cereal; the ingredients are amazing, and it’s (very) lightly sweetened with coconut sugar.
- Freeze-dried strawberries: I get these from Trader Joe’s – they’re the best price!
- Tahini
- Honey: If you’re vegan, sub with maple syrup.
- Vanilla paste or ground vanilla bean: Recently discovered this ground vanilla that is just like vanilla paste, but without any added ingredients or fillers. If you don’t have vanilla paste/ground vanilla, substitute with vanilla extract.
- Kosher salt: Just a little pinch of salt amplifies everything!

Tips for the Best Strawberry Rice Krispie Treats
- Use a 9×9 square pan for crisp-edged, perfectly square, rice krispie treats.Â
- Firmly pack (like really really firmly pack) the rice krispies down with a measuring cup or glass. It’ll compress the rice krispies and make the treats more dense and chewy.
- Freeze the rice krispies before cutting them. It’s much easier to cut these when they’re frozen, as opposed to sticky and hot on the counter.
- Store any leftovers in the fridge or freezer – they’ll get too soft on the counter. I like to put a sheet of parchment between each layer so the krispies don’t stick to each other.

Description
These strawberry rice krispie treats are a fun twist on a nostalgic childhood classic, and loaded with crushed strawberries, honey, and tahini for the ultimate no-bake summer treat!
Ingredients
- 5 cups (200 g) brown rice cerealÂ
- 2 cups (1.2 oz or 34 g) freeze-dried strawberries*
- 3/4 cup (195 g) honey
- 3/4 cup (140 g) tahiniÂ
- 1/2 tsp ground vanilla or vanilla bean paste
- 1/4 tsp kosher salt
Instructions
- Prep the pan. Line a 9×9 square pan with parchment paper.Â
- Prep the cereal. Crush the strawberries in a mortar and pestle or with whatever you’ve got until the strawberries are a mix of tiny pieces and strawberry powder. If you’re using the Trader Joe’s freeze-dried strawberries, the bag is exactly 1.2 oz, so I just crush the strawberries in the bag before opening. Mix together in a large bowl with the rice cereal and set aside.
- Make the syrup mixture. In a saucepan or pot, add the honey, tahini, vanilla, and salt. Heat on low heat until it’s warm and starts to bubble gently.
- Mix, pack, and freeze. Pour the syrup mixture over the cereal and fold together with a rubber spatula. Pour the mixture into the prepared pan and spread into an even layer. Using a measuring cup or glass, firmly pack the rice krispie treats down to compress them. Cover with plastic wrap and freeze for 1 hour until set.
- Cut and store. Cut the rice krispie treats into 16 squares and store them in a glass container in the fridge or freezer for up to 1 week.
Notes
*Feel free to use 1 1/2 cups (25 g or .9 oz) freeze-dried strawberries if you want a more subtle strawberry flavor.
Any changes if you want to use fresh strawberries?
Unfortunately, fresh strawberries won’t work for these at all – the water from the strawberries will make the cereal soggy.
