How To Make These Pancake Recipes
The great thing about these pancake recipes is that they are all SUPER easy to make! They all have the same base recipes, with a few minor ingredient amounts that differ.
- The first step to making the pancakes is blending the oats into oat flour. I would recommend using a spice grinder if you have one, as it will get the flour super fine. However, a blender or ninja blender also work just as well.
- Once the oats are blended, you’ll combine them with the spelt flour, baking powder, baking soda and salt. Mix the dry ingredients together well, you don’t want any lumps, especially from the matcha.
- Once the dry ingredients are combine, add in the greek yogurt and almond milk, and stir until everything is just combined. Be sure to not over-mix the batter. It will start to become gloopy as more and more gluten is activated.
- The next, and MOST IMPORTANT step is to let the batter rest for 10-15 minutes. This resting time helps activate the baking soda and greek yogurt, which gives rise to the pancakes. By letting the batter sit, it will also thicken up, as the oats absorb some of the liquid. All in all, DO NOT skip this step, I have tried to rush the process and fry up the pancakes right away, and they become super flat and cardboard-like. So use the time to clean up and prep the toppings or heat up your skillet.
- Once your skillet is hot, spoon a tbsp of the pancake batter into the pan, you should be able to fry up to four pancakes at a time. Just be sure to leave room to flip the pancakes. Fry the pancakes for 2 minutes on medium heat, until bubbles begin to form on the top, and the edges are set. Flip the pancakes and cook for another 30 seconds, just to set the bottom.
- One tip, while the rest of the pancakes cook, let the cooked pancakes rest on a wire rack. If you let them rest on a plate, they will start to become soggy because of the moisture from the pancakes themselves.
