- Creamy Fall Harvest Soup: It’s a combo of all the cozy fall vegetables, like kabocha squash, sweet white onion, bell pepper, and garlic. It’s creamy and sweet, with just a hint of heat and umami from the pepper and nutritional yeast.
Vegan Thanksgiving Salads
- Roasted Brussels Sprout Salad: For everyone who doesn’t really like brussels sprouts, this salad is for you. Thinly shaving the brussels sprouts and roasting them changes the flavor and texture so much.
- Baked Kale Salad with Crispy Quinoa: Think roasted kale, crispy quinoa, and toasted almonds, tossed in a sweet and creamy honey lemon vinaigrette. Like what more could you want?!
- Roasted Fall Harvest Salad: The base of this salad is dino kale and quinoa, topped with roasted chickpeas and squash, toasted pumpkin seeds, and golden raisins. And if that didn’t sound good enough, everything gets tossed together in a sweet and creamy apple tahini dressing!
